70 % Fuglsang pale malt, 6 EBC
6.9 % Thomas Fawcett amber malt, 100 EBC
6,9 % Thomas Fawcett crystal malt, 150 EBC
10.4 % Crisp crystal malt 240, 250 EBC
5.2 % Thomas Fawcett pale chocolate malt, 600 EBC
1.7 % Crisp black malt, 1250 EBC

Hops:

Horizon to hit target IBU @ 60 min.
0.77 g/l East Kent Goldings @ 15 min.
0.77 g/l East Kent Goldings @ WP

Yeast:

Wyeast 1728, fresh slurry

Mash:

67 °C, 45 min., 77 C°, 5 min.
After the mash is finished it is transferred to the later tun. All the sweet wort is drawn off and run to the kettle. The grains are then mixed with all the needed sparge water. After recirculation to achieve a clear wort, the sweet wort is again run to the boil kettle. No additional sparging is done.

Boil:

60 min.

Fermentation:

Pitch at 18 °C
Ferment at 20 °C for 10-14 days.
