10.5 % Thomas Fawcett crystal malt II, 150 EBC

0.8 % Thomas Fawcett roasted barley, 1400 EBC

Hops:
0.93 g/l Nelson Sauvin, 5 min.
0.93 g/l Challenger, 5 min.
0.93 g/l Nelson Sauvin, dry hop, day 7
0.93 g/l Challenger, dry hop, day 7

Yeast:
Wyeast 1728, fresh slurry

Mash:
70 °C, 60 min.
After 60 min. the mash is transferred to the later tun. All the sweet wort is drained from the mash, and the grains are mixed with all the needed sparge water. After recirculation to achieve clear wort, the sweet wort is run to the boil kettle. No additional sparging is done.

Boil:
60 min.

Fermentation:
20 °C, 10-14 days
